Ingredients:
- 1 eggplant, diced
- 2 zucchinis, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 4 tomatoes, diced
- 1/4 cup olive oil
- Salt and pepper, to taste
- Fresh basil, chopped, for garnish
Instructions:
Prepare the Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until soft.
Cook the Vegetables:
Add the eggplant, zucchinis, and bell peppers to the skillet. Cook for about 10 minutes, stirring occasionally. Add the tomatoes, salt, and pepper. Simmer for another 20-25 minutes, until the vegetables are tender.
Serve:
Garnish with fresh basil and serve as a main dish or side dish.
