Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1/4 cup olive oil
- Salt and pepper to taste
- Assorted vegetables (carrots, bell peppers, zucchini), cut into chunks
Instructions:
- In a bowl, mix lemon juice, garlic, rosemary, thyme, olive oil, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side, until fully cooked.
- While the chicken is grilling, roast the vegetables in the oven at 400°F (200°C) for 20-25 minutes.
- Serve the grilled chicken with the roasted vegetables.
