Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 avocado, diced
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1/4 cup lime juice
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions:
- Rinse quinoa under cold water. Combine quinoa and water in a saucepan and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.
- In a large bowl, combine cooked quinoa, avocado, black beans, corn, and cherry tomatoes.
- In a small bowl, whisk together lime juice, olive oil, cilantro, salt, and pepper.
- Pour dressing over salad and toss to combine.
