Quinoa Salad with Avocado and Black Beans

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 avocado, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions:

  1. Rinse quinoa under cold water. Combine quinoa and water in a saucepan and bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed.
  3. In a large bowl, combine cooked quinoa, avocado, black beans, corn, and cherry tomatoes.
  4. In a small bowl, whisk together lime juice, olive oil, cilantro, salt, and pepper.
  5. Pour dressing over salad and toss to combine.
