Spaghetti Carbonara

Ingredients:

  • 12 oz spaghetti
  • 4 oz pancetta, diced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions:

  1. Cook the spaghetti according to package instructions. Reserve 1 cup of pasta water.
  2. In a large skillet, cook the pancetta until crispy. Add garlic and cook for 1 minute.
  3. In a bowl, whisk together eggs and Parmesan cheese.
  4. Drain the pasta and add to the skillet with pancetta. Remove from heat.
  5. Quickly pour the egg and cheese mixture over the pasta, stirring constantly.
  6. Add reserved pasta water a little at a time until the sauce reaches desired consistency.
  7. Season with salt and black pepper. Garnish with parsley.
