Ingredients:
- 12 oz spaghetti
- 4 oz pancetta, diced
- 2 large eggs
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions:
- Cook the spaghetti according to package instructions. Reserve 1 cup of pasta water.
- In a large skillet, cook the pancetta until crispy. Add garlic and cook for 1 minute.
- In a bowl, whisk together eggs and Parmesan cheese.
- Drain the pasta and add to the skillet with pancetta. Remove from heat.
- Quickly pour the egg and cheese mixture over the pasta, stirring constantly.
- Add reserved pasta water a little at a time until the sauce reaches desired consistency.
- Season with salt and black pepper. Garnish with parsley.
