Vegetable Stir-Fry with Tofu

Ingredients:

  • 1 block firm tofu, pressed and cubed
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 cups steamed rice
  • Sesame seeds and green onions for garnish

Instructions:

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add tofu cubes and stir-fry until golden brown. Remove from pan and set aside.
  3. In the same pan, add ginger and garlic, and cook until fragrant.
  4. Add bell pepper, broccoli, and snap peas. Stir-fry for 5-7 minutes.
  5. Return tofu to the pan and add soy sauce. Stir until everything is well-coated.
  6. Serve over steamed rice, garnished with sesame seeds and green onions.
